Oh my zucchini! My house is overwhelmed with zucchini right now. They are huge and there are a lot of them! We don’t have enough neighbors and friends to take them off our hands either!
We have tried zucchini in what feels like 1,000 different ways. We have had it fried, as parmesan crisps, plain on the grill, as lasagna noodles, cookies and in brownies. After trying (and failing) the zucchini lasagna, we took a little break from our experiments with this vegetable (or fruit if you are a botanist). Our latest trials have been with zucchini bread. We have tried double chocolate and a lemon recipe. My favorite recipe has been the brownies. They are so gooey and rich. The best part about this recipe, no one will know there is a vegetable in them, unless you tell them of course.
One thing that really surprised me about this recipe, there are no eggs. I wasn’t sure if they were going to turn out, but I have made them twice now and they have turned out great both times.
Zucchini Brownies
Brownies:
2 C All-Purpose Flour
½ C Cocoa Powder
1 ½ t Baking Soda
1 t Salt
½ C vegetable oil
1 ½ C Sugar
2 t Vanilla Extract
2 C Shredded Zucchini (about 1 large or 2 small…or ½ of the massive zucchini at my house)
3-5 T Water (optional)
Frosting:
3 T Cocoa Powder
¼ C Butter, Melted
2 C Powdered Sugar
¼ C Milk
1 T Vanilla Extract
1 Pinch of Salt
Preheat oven to 350°F. Spray a 9x13 baking dish with cooking spray.
In a bowl, mix together flour, cocoa, baking soda, and salt.
In a separate bowl, mix oil, sugar, and vanilla until combined.
Add dry ingredients, and mix.
Fold in Zucchini. Let stand 5 minutes.
The batter should be thick, but if it is still powdery, add up to 5 T of water. (I did not have to add any) It should look similar to cookie dough.
Spread into prepared pan.
Bake for 25-30 minutes until toothpick comes out clean.
Make frosting and spread over brownies after they are cooled.
To make frosting: combine melted butter, cocoa, salt, and powdered sugar. Stir in milk and vanilla.
The brownies are ready to eat when the frosting has hardened slightly on top.
