We had Chicken Fajita Pasta the other night and it was delicious! It’s a one pot recipe so the cleanup is easy.

Serves: 3-4 people
Ingredients:
1.5 Tbsp Olive oil
2 large Chicken breast
1 packet Taco seasoning
1 medium Onion, diced
1 Bell pepper, diced
2 1/2 cup Chicken broth
1 can (10oz) Ro-tel diced tomatoes and green chilies
16 oz box Rotini pasta
Directions:
Add 1.5 Tbsp olive oil to a large pan and heat up. While the oil is heating, cut up chicken into small cubes and place in the pan.
Season the chicken with taco seasoning and cook fully. Once it is done remove it from pan and set aside.
Put the onions and peppers into your pan and cook until they are soft. Once done, remove the vegetables and set aside with the chicken.
In the same pan add the pasta, chicken broth, and Ro-tel. Bring this to a boil and then cover. Continue to cook on medium heat for about 15 minutes or until pasta is cooked. Most of the liquid will be gone at this time.
Last, add the chicken and veggies back into the pan with your pasta and stir.
