Mother's Day Brunch Part I

In honor of Mother's Day, I would like to dedicate this post to my awesome mom. She put up with a lot while I was growing up and I know it wasn't easy.

This year my husband and I were fortunate enough to have both of our parents come over to our house and we only had to do one mother's day. I made brunch for our moms. I wanted to keep all menu items with a "mom" theme, but I could only come up with a couple of clever (or corny) names. Here is our final menu:

I would include all of my recipes for brunch in one post, but that would make it huge. Instead, I am going to break it up into three posts. Anyway, part I will be the Cina"mom" rolls. The original recipe is supposed to be from Cinnabon. I am not sure how close the recipes actually are, but they turned out REALLY great. Without further hesitation, here is the recipe.

CINA"MOM ROLLS

Makes 12 Rolls

INGREDIENTS

Dough

· 1 package active dry yeast

· 1 cup warm milk

· ½ cup granulated sugar

· ⅓ cup butter (softened)

· 1 tsp salt

· 2 eggs

· 4 cups flour

Filling

· 1 cup packed brown sugar

· 3 tbsp cinnamon

· ⅓ cup butter (softened)

Cream Cheese Icing

· 6 tbsp butter

· 1½ cups powdered sugar

· ¼ cup cream cheese

· ½ tsp vanilla

· ⅛ tsp salt

Directions

1. Dissolve the yeast in the warm milk in a large bowl.

2. In separate bowl, add sugar, butter, salt, eggs, and flour and mix well.

3. Add milk/yeast mixture mix well using a dough hook.

4. Cover and let rise in a warm place for 1 hour or until the dough has doubled in size.

5. While Dough is rising, make filling.

6. To make filling, combine the butter, brown sugar, margarine and cinnamon in a bowl. Set aside.

7. Roll dough out on lightly floured surface, until it is about 16 inches long by 12 inches wide or about ¼ inch thick.

8. Preheat oven to 350 F degrees.

9. Spread the mixture evenly over the surface of the dough.

10. Carefully, begin to roll the long edge of the dough down to the opposite edge.

11. Cut the dough 12 even slices, and place in lightly greased 9 x13 pan and cover them with a damp towel. Let them rise again for another 30 minutes until they double in size.

12. Bake for 30 minutes or until light golden brown.

13. Meanwhile, make the icing.

14. Beat butter, powdered sugar, cream cheese, vanilla, and salt until smooth.

15. When the rolls are done, spread generously with icing.
