Fish Cakes

I love fish. Unfortunately, my husband hates it and refuses to eat it, so it is a rare occasion when I get to eat fish. He told me that he was going over to his parents house (they only live ten minutes away) to help them out with their computer and would be staying for dinner. He gave me the option of not going and since my mother-in-law is driving me crazy, I decided it was better for my sanity if I just stayed at home. I had a filet of tilapia in the freezer so I decided that I would make something with it.

The original recipe was from Hello Fresh where they send you all of the ingredients to make a meal for two (or four) and it is delivered right to your door. It was really great not having to plan dinners and go grocery shopping, but I would rather deal with those things instead of pay $70 for someone else to do it, but I had a coupon to try it and it only cost a dollar, so I think that was worth it. Anyway, the original recipe called for shrimp but I figured why not try it with fish.

Here is the approximate recipe that I used since I didn't measure anything I just kind of threw it together.

2 Fish Fillets (I used Tilapia)

2 Cloves Garlic

1 Small Onion

1 Jalepeño (to taste)

1 Teaspoon Dried Parsley

1/2 Cup Breadcrumbs

1/4 Cup Mayo

1/4 Teaspoon Chili Pepper*

1/4 Teaspoon Cayenne Pepper*

Salt

Pepper

Fresh Spinach

Tarter Sauce (I made my own with relish and mayo)

1. Finely dice onoin and jalepeño. Mince Garlic.

2. Heat 1 Tablespoon of olive oil in a pan and add onion, jalepeño, and garlic. Season with salt and pepper. Cook for about 5 minutes until onion and pepper are tender.

3. Meanwhile, cut fish into bite-sized pieces, the smaller the better.

4. Place the fish in a bowl and mix with sauteed onion mixture, spices*, mayo, and breadcrumbs. Season with salt and pepper.

5. Mix well and form into patties.

6. Heat 1 tablespoon of oil in pan over medium high heat.

7. Sear patties for about 3 minutes on each side until golden brown on each side or until fish is cooked through.**

8. Serve over bed of spinach and top with tarter sauce.

* You may want to add addional spices depending on your tastebuds, but these are what I had on hand.

**My patties did not stay together. I might add a little more mayo, but I really enjoyed the flavor, so I may just use it as a salad topping.

My fish cakes tasted pretty good. I would definately make them again the next time my husband isn't home for dinner. Let me know what you think in the comments.
