Crock-Pot Chicken Parmesan Sandwiches
I don't know about anyone else but I love crock-pot recipes! They save a lot of time and are usually pretty easy to make. This weekend I made chicken parmesan sandwich filling in the crock-pot and it was great!
I got the recipe from this blog: http://melaniemakes.com/blog/2013/12/slow-cooker-chicken-parmesan-sandwiches.html. I changed a few things but pretty much stayed with the same general idea.
Ingredients:

3 chicken breasts (frozen works fine)

14.5 oz. can crushed tomatoes

14.5 oz. diced tomatoes

12 oz. tomato paste

1/2 cup parmesan cheese, shredded

1 large onion, diced

1/2 tsp. oregano
-
1/2 tsp. basil
-
1/2 tsp. Italian Seasoning

Mozzarella cheese (shredded or slices)

6 buns (I used hoagie buns)
Instructions:

Add crushed tomatoes, diced tomatoes, tomato paste, parmesan cheese, onion, oregano, and basil to lightly greased crock-pot.

Add chicken to the sauce and cook for 4 hours on high or 6-7 hours on low.

Remove chicken from crock-pot and shred. Return chicken to sauce and stir.

Put cheese on top half of bun and place in the oven until cheese has melted, you can also toast the bottom half at the same time.

Scoop chicken parmesan mixture onto bun and enjoy your sandwich!
