Breakfast Skillet
I tried making this breakfast skillet a few weeks ago and it turned out really well! Definitely not the healthiest but I'm sure there are some changes that could make it healthier.

Ingredients:

6 bacon strips

1 bag frozen shredded hash browns

1/2 chopped green pepper

1/2 chopped onion

4 - 6 eggs

1/2 cup shredded cheddar cheese
Instructions:

In a large skillet cook bacon until crisp. Remove bacon; crumble and set aside.

Drain most of the bacon grease from the pan but keep 2 tablespoons of drippings.

Add the hash browns, green pepper, and onion to bacon grease.

Cook and stir for 2 minutes.

Cover and cook for about 15 minutes or until hash browns are browned and tender, stirring occasionally.

Make 4-6 indentions in the potatoes.

Break one egg into each indention.

Cover and cook on low heat for 8-10 minutes or until eggs are completely set

Sprinkle with cheese and bacon.

Allow cheese to melt before serving.
